Veggie Pizza

Keeping healthy meals and snacks on the menu can be a tough task for the on-the-go family! Driving through for fast food after school or practice is often the quick fix for a tight schedule, but with a bit of planning and grocery shopping, you can have quick and easy meals that can be eaten on the go...AND they're good for your family!
This Veggie Pizza is a great way to get your athlete carbohydrates and the ever elusive veggie! This meal is easy to take in the car, which if you're an athlete's parent you know how many meals are eaten in the car! It's also easy to make after those late practices when your athlete is starving and wants a meal that's ready in 10 minutes.
Ingredients:
Mini whole grain flatbread or pizza crust (store bought)
Lite Ranch Dressing
Steamed Broccoli & Cauliflower
Shredded Mozzarella Cheese
(There's no need to measure the ingredients. You can load on as much or as little as desired.)
Directions:
Preheat oven according to directions on flatbread or pizza crust package. We like to use the mini crusts because they're easy for on-the-go, and more fun for kids to eat! Most mini crusts cook within 5-7 minutes. While the oven is preheating, steam the veggies. "Steam in the bag" veggies are your quickest option. Then, top the crust with ranch dressing as your "sauce," followed by the steamed veggies and shredded mozzarella. Bake on a cookie sheet for the time specified on the pizza crust package, and ENJOY!
