Apple Pie Parfait

There are so many guilty pleasures on the menu during the holidays, and with holiday tournaments and showcase events, athletes must choose their treats wisely. This twist on an apple pie treat is not just guilt-free, but a smart choice! Packed with protein and carbohydrates, your athlete can enjoy the tastes of fall, while fueling up for competition. The warm cinnamon apples, topped with vanilla yogurt, crunchy almond granola and an apple honey glaze will not just please your taste buds, but will also fill your house with the aroma of Thanksgiving!
Ingredients for 1 serving:
1 Large apple peeled and sectioned
1 Tbs. of honey
1 Tbs. of water
1/8 tsp. of cinnamon
1 cup of low fat vanilla yogurt
¼ cup of honey nut granola (find recipe here)
Peel and section one large apple and place pieces in a microwave safe bowl. To the bowl, add water, honey, and cinnamon. Cover and microwave apple pieces for 3-4 minutes until they’re tender, but not mushy. Put apple aside to cool, and save the honey glaze that is in the bowl of apples. Once cooled, layer apples, yogurt, and granola. Finish off with a drizzle of the cinnamon and honey glaze left in the bowl of apples. Feel free to adjust the amount of yogurt and granola to your taste. There are no rules!
