Chicken and Avocado Flatbread Pizza

After all, if you're the coach or parent of athletes you're probably on the go a lot, and your time is precious. The great thing is, you don't have to sacrifice nutrition due to lack of time. This Chicken and Avocado Flatbread Pizza can be ready in minutes, and can even be eaten on the go if needed! The combination of whole grains and lean proteins landed this recipe in with the rest of our Fueling Recipes!
Ingredients:
1 Flatbread Crust (We used a store bought whole grain flatbread)
Olive Oil (enough to brush the flatbread with)
Salt
Pepper
Garlic Powder
1 Large Avocado Sliced
1 Cup of Cooked Cubed Chicken Breast (To keep it simple, we used a rotisserie chicken - breast meat.)
1/2 Cup Shredded Mozzarella Cheese
Directions:
Preheat oven to 350 degrees. Place flatbread on a baking sheet. Lightly brush the flatbread with olive oil and sprinkle, salt, pepper, and garlic powder to taste. Next, place avocado slices to cover the flatbread, leaving a border around for crust. Add the chicken, and put in the oven for approximately 8 minutes. Cooking times may vary depending on what type of flatbread you use. Follow the cooking directions on the flatbread package. When there's about 1 minute of baking time left, add the mozzarella. Once the mozzarella is melted your Chicken and Avocado Flatbread Pizza is ready to serve!
